Makes 2 loaves of Pumpkin Bread

Preheat oven to 350F

You’ll need 2 large mixing bowls and 2 loaf pans.

Mix the wet ingredients and sugars in one bowl:

15 oz can pumpkin

4 eggs

1 cup vegetable oil

2/3 cup water

2 cups sugar

1 cup brown sugar

Mix dry ingredients in a different bowl:

3 ½ cups flour

2 tsp baking soda

1 ½ tsp salt

1 tsp cinnamon

Dash of nutmeg

Mix wet+sugars and dry ingredients separately

Make a well in the dry ingredients.

Pour the wet ingredients into the into dry and mix by hand until combined. Don’t over mix.

Divide into 2 greased loaf pans

Bake at 350 for 60 minutes or when a toothpick comes out clean from the center of the loaf.

Cool before slicing. Freezes well.

Make muffins instead:

If you make muffins instead, decrease bake time to 30 minutes or when a toothpick comes out clean from the center of the muffins.
