This soup is in a constant meal plan rotation in my house from late October till we get sick of it, or untill the weather warms up-whichever comes first.
You could say I heavily embrace soup season with BIG sweater-covered arms, so this recipe is among many family favorite soups we enjoy throughout the colder months.
What makes this soup so special is it provides the flavors of lasagna without the pain in the ass that making lasagna provides.
If you stick around long enough you’ll find that I love all things pasta but strongly dislike making lasagna. Don’t get me wrong-I absolutely LOVE eating lasagna…I just hate making it. Overtime I’ve figured out some creative ways to get the flavors without building animocity for making dinner.
Lasagna Soup
Quick and easy soup recipe bringing all the flavors of Lasagna to the table without the fuss.
Ingredients
- 1 can tomato sauce
- 1 can diced tomatoes
- 4 cups chicken broth
- 1/2 pound ground beef, browned
- 1/2 chopped onion
- Fresh minced garlic (1-2 cloves)
- 1 tsp oregano
- 1/2 tsp thyme
- 1 tsp sugar
- 1/2 lb pasta (shells work great)
- Cheese topping:
- 1/2 cup grated parm mixed with 1/2 cup ricotta
- 1/2 tsp garlic salt
- 1/2 tsp dried parsley
- dash of pepper
Instructions
- While you're browing and chopping the ground beef, chop the onion and mince some garlic.
- Once the ground beef is almost done, drain some fat and add the onion. Cook until translucent, stirring frequently.
- Lower the heat, add minced garlic and stir until fragrant.
- Add tomato sauce, tomatoes, broth, sugar and spices.
- Simmer on low for 15 minutes uncovered. Once all the ingredients are heated through it's ready, however you can cover and keep it on a low simmer for longer. I've put this in a crock pot to keep warm for hours and it's great.
Cheese Topping:
This soup isn't the same without this ricotta parmesan topping. Mix the following ingredients together:
1/2 cup grated parm mixed with 1/2 cup ricotta
1/2 tsp garlic salt
1/2 tsp dried parsley
dash of pepper
Add a dollop or two to each bowl as you serve it up.
