Fried Rice

The trick to making fried rice at home is in the technique: To keep the rice from sticking together in a big clump, you have to use leftover rice. You’ll also want to add the egg into the vegetable/meat mixture BEFORE you add the leftover rice.

There’s a chemical change that happens in cooked rice when it cools down that makes it less likely to clump together. This makes better fried rice.

What’s great about this dish is you can throw any kind of meat and vegetables together, and depending on what you’re working with, this fried rice can be a side dish or the main dish.

Leftover meat (optional)

2 cups vegetables

1 cup chopped onion plus some green onions for garnish

2 garlic cloves, minced

1 tsp fresh grated ginger

3 cups white rice cooked

1 large egg scrambled

3 tablespoons soy sauce or coconut aminos

Garnish with green onions (optional)

To get started, cook the vegetables in a large skillet over medium-low heat until they’re tender and onions are slightly translucent.

Add in a whole egg, and constantly stirring until the egg is cooked.

Add the rice, soy sauce, and leftover meat, stir to combine. Serve once heated through.

Ingredients

  • Leftover meat (optional)
  • 2 cups vegetables (like carrots, celery, summer squash, broccoli, etc.)
  • 1 cup chopped onion plus some green onions for garnish
  • 2 garlic cloves, minced
  • 1 tsp fresh grated ginger
  • 3 cups white rice cooked
  • 1 large egg scrambled
  • 3 tablespoons soy sauce or coconut aminos
  • Garnish with green onions and sesame oil (optional)

Instructions

To get started, coat a large skillet with some neutral oil like avocado oil.

Add the vegetables once the skillet is hot and the oil is shimmering.

Cook the vegetables in a large skillet over medium-low heat until they're tender and onions are slightly translucent.

Add in a whole egg, and constantly stirring until the egg is cooked.

Add the rice, soy sauce, and leftover meat, stir to combine. Serve once heated through.

Notes

There's a chemical change that happens in cooked rice when it cools down that makes it less likely to clump together. It also dries out as it cools, so it has room to soak in the flavors you mix into it. The end result is a better fried rice.

Sesame oil is a seasoning, not a cooking oil, and is best used as a garnish.
